They are usually just ushers and the men who help out around the church with lifting things, fixing things, etc. For bigger people, there is usually more than one person "catching".

At funerals, the funeral home designates staff to deal with specific family members who might need catching!

Just because someone needs "catching" doesn't mean they "act the fool". Some people faint at funerals. Many people, when they grieve, don't eat very much, if at all. By the time the funeral rolls around, they are so weak, they can barely stand without support.
