Chile someone tell me say they mudda send some crab and dried conch fa me:bouncy: from Andros. So when I get home I intend ta cook crab and dried conch and rice with crack conch and patata salid!! mmmmmmm..

I ga call her soon terkeckly and tell her ta soak it fa ma.

Ok yall, laugh at me if you must but I have to ask this!

What do you use dry conch for and how do you actually use it? I have always seen it but never really knew.

What do you use dry conch for and how do you actually use it? I have always seen it but never really knew.
The main uses I know of are for soups and conch n rice or conch n grits.

To use it, you first have to rehydrate it by soaking it in water (preferably overnight) then I would beat it, change the water and boil it until soft and then add to whatever recipe I was going to use it in. Just as I would use fresh conch. Depending on if it had been brined before drying (corning) you may want to hold off on adding salt to your dish until you have tasted it.

I usually soak, boil (Scald), throw off that water and boil again until tender...save the water from the second boiling and add to you pot for additional flavor.

The main thing to remember when drying conch is that every fly in a 100 mile radius is coming looking for that conch :D

Anyway:
Clean the conch and wash it well with lime, I would then soak it in brine made from salt and water (about 2 ounces salt to a cup of water) overnight. Drain it well. then you can either hang it up outside on the line in the sun/wind for a few days until dried but still slightly flexible or you can put it in a food dehydrator or the oven (if it's gas, the heat from the pilot light will be enough, otherwise use the absolute lowest heat setting and leave the door slightly open)
Another way, if you have an enclosed water heater, i.e. the water heater is in a cupboard, is to hang it over the water heater.

Whereever you decide to dry conch (or anything else) try to keep the humidity levels as low as possible.

Yes I have, you have to be careful that it does not become over-dried and brittle (especially when using a dehydrator) as then it is very hard to rehydrate and as I say flies are a major problem!
