Burkina 10-11-05, - 04:21 PM CG. okay, so i had my little dinner party where i served mac and cheese Bahamian style, the key lime chicken and a spinach salad. If i must say so myself, this was the best dinner party i've ever had, and the best time I've had cooking this far. The chicken was so tangy and tasty, though a little over cooked it was delicious, and my mac and cheese, folks were calling the next day for left overs. Thanks so much, I will buy the South African wine, there's a local African liquor store about a mile from my campus. so I'm sure that they will have it.
Please post the South African recipe (Ebby) I think you said, i love African food, and i enjoy cooking it.

I am so glad to hear that! I think you will agree that it is wonderful to have friends over and to cook for them - more wonderful when one can cook foods from one's home country.

That is the danger with chicken, some times it is a small chicken, sometime a large one. But you will know next time how long to cook it.

Bahamian Mac & Cheese! Can't be beaten! I will let my wife know you liked her recipe.
I will buy the South African wine, there's a local African liquor store about a mile from my campus. so I'm sure that they will have it.
I am sure they will but one does not have to go to an African wine merchant. South African wines have an international reputation for quality - they can be found in any of the best wine stores.
Please post the South African recipe (Ebby) I think you said, i love African food, and i enjoy cooking it.

Beef Ebbe.
(If you leave the beef out, it is just Ebbe. If you can get your hands on some exotic meats, like Springbok, Buffalo or even Deer so much the better, but that might be difficult. It is impossible here in Nassau! )
Step 1:
Ingredients: (as you can see it serves a lot of people! Cut it down if the needs be.)
In a large pot add:
4 - 5lbs potatoes, pealed and cut into quarters.
1 LARGE onion, pealed and cut into quarters.
5 cloves of Garlic, pealed and cut into quarters.
Boil the above in a pot of water, drain when done and return to the pot. Don't over cook! You will know when it is done when the potatoes can be pierced with a fork.
Step 2:
In a fry pan add:
1 to 2 tablespoons of Olive Oil.
1 lbs of Steak (or any other kind of read meat) cut into strips.
1 medium size onion cut into rings
1 clove of garlic, cut up.
Fry until the meat looks done. Again, don't over cook.
Step 3:
When Step 2 is cooked, add it to the big pot that holds the potatoes. Don't throw away the oil from the fry pan! Add that as well.
Then add 2 tins of canned tomatoes. (Drain the liquid from the cans if you like your Ebbe drier.)
1 Table spoon of Bisto (or any other kind of gravy flavoring) to ½ a cup of cold water. Mix it well and add to the potatoes.
Warm everything up until it is hot.
Add more water if it looks too dry. It should not be too wet, or too dry.
Stir everything well. When stirring be careful not to brake up the potatoes any more than necessary.
A can of corn can be added if you wish, but that is optional.
Serve in a bowl with salt and pepper to taste. A pat of butter does not hurt!
Ebbe is not a side dish. It is the main course.

And, i will use the Buffalo meat wich I love, I did my undergrad work on the plains of midwestern United States, where i ate a lot of Bisan, pheasant, deer and you name it, my host father was an avid hunter, so we had to eat his KILL. And he still sends me meat. Well I will try this recipe with the Bisan and see how it goes, I'll let you know.
Aslo, this girl from Barbados made some (Sweet Bread), which was desert and so good, let me know if you want the recipe and i will get it from her and post it.

As I understand it Ebbe is a common dish in Africa and goes by many names. All I know is that it is good to the taste and filling!

Wow! Are you lucky to be able to get such meat! The last time I had Bison was about five years ago. I wish it was more available, it is a lean meat with a better taste than beef as I am sure you know.

Punch Bowl Cake somepeople call it a trifle, I think but here goes
1 baked box yellow cake or whatever kind of cake you like
1 tub of cool whip or readi whip
canned fruit in syrup or fresh fruit if you like, like peaches/fruit cocktail/apples/strawberries
Banana or vanilla Pudding (Cheap jello brand is fine)
Glass Jar Cherries (for decoration)
1 Clear Glass Punch Bowl (So you can see the layers)
crumble the cake up and set aside
take enough cake to cover the bottom of the bowl probably two cups and have that as your first layer in the bowl
take a layer of fruit and layer it with that
then layer pudding mix over the fruit
then the whipping cream over that and repeat the process until everything is in the bowl and top with a massive layer of cool whip and top with cherries or even coconut or chocalate shavings
I promise you, youll love it but it sweet and soooooooo good!!!!!
Burkina 11-02-05, - 12:24 PM You asked about a sweet red wine. I spoke to a friend of mine in the wine business. He recommended a good South African wine called Pearl Bay. I had never heard of it. It is not expensive, about $6.00 a bottle but he says it is not bad at all. South Africa has, and still does, produce some very good wines. I have an African recipe for a dish called Ebba (I think that is the spelling) given to me by a relative who is a native of Nigeria. Ebba (A potato disk) with an African wine! Wonderful.:cheers:

Anyways, i know that I've been gone a long time, and did not post the recipe for the 'Sweet Bread' like i promised, but here it is now:
Flour
Baking powder
Oil
Brown sugar
Honey
coconut flakes
Dried fruit medly
Almond Extract
Vanilla Extract
Noticed that i did not put measured amounts, because i don't know, i know that it was made like loaves of bread. It's baked for about 45 min, when done, Let sit for about an hour before cutting into it. Delicious!
Guess what i found the wine, the exact bottle of Pearl Bay, which costed $4.98 and i might add very delicious.
Tell me more. I have never tried it. Was is too sweet or just right for your taste? $4.98 a bottle? That is not to bad. It just goes to show, one does not need to spend a fortune on wine to find a good one. Also, try some Australia wines sometime.

I tried it once with chicken breasts! Not bad!
As you can get your hands on some exotic meats, try to find Guinea Fowls (an African favorite). Roast them with potatoes and make a gravy from scratch! If you want the home-made gravy recipe let me know. Canned gravy is not anywhere near as good.

My blood sugar shot up just reading that!!!!! I'll try it. My mother used to make a trifle that sound very much like this but she used custard and a bit of sherry.

Any authentic Bahamian cookbooks out there?

CG i use the same ingredients, these are the only slight differences:
I let my water boil before adding the noodles, and I put just a lil drop of oil in the water too. In the mixture I use like a can of cream to a box of noodles (ready cut). After i drain the water i add a bit more butter in the noodles so it doesnt stick to the pot. I like my macaroni creamy and cheesy so I use a bit more cheese and cream. When the mixture is creamy and yellowish I grease the pan and bake it.
I spent a few years in San Sal so we didnt use measuring cups everything was measured by instinct. My secret ingredient is ..... lots of love, my family loves my macaroni n cheese.
My boyfriend's mother has a different way making hers, he believes its the greatest macaroni in the world, so I'll get it from her and post it.
On a healthe vibe i used the MSG or other flavour enhancer, but they're not good for you and I am changing my eating habits/ diet. Im going to try the wheat noodles and cut of the magarine and cream, and see what happens.
