I need a good, no a great recipie. Appreciate any help.

try these.

But mines is

slice onions and celery and sweet pepper up and fry them down in a pot with cooking oil or ( Bacon )
add tomatoe paste and browning
tin of pigeon pease ( sawyer's)

add 4 tins of water and let boil
season with thyme black pepper and salt( some people like goat pepper in their rice)

Add three cups of rice parboiled you can't under cook or over cook

turn the fire down and cover pot and let simmer and soak.

Here's the one I use with the kids at school

Peas and Rice
1 can Pigeon Peas
2 tbsp Tomato Paste
1 tsp Thyme
2 tbsp Oil
¼ lb. Salt Pork or Bacon
1 Stick Celery, (finely chopped)
1 Onion, finely (chopped)
½ Sweet Pepper,( finely chopped)
1 tsp Salt
2 tbsp Kitchen Bouquet
1½ C Rice
3 C Water

1. Heat oil in a large pot. Fry salt pork until brown. Add vegetables; fry for 3 mins Add tomato paste; fry for 3 mins
2. Add peas and thyme to pot.
3. Stir in water, salt and kitchen bouquet. Bring to the boil. Stir in rice.
4. Cover pot. Reduce heat. Cook slowly until all of the water has been absorbed and the rice is tender.
5. Turn off heat. Leave for 5 - 10 mins Fluff with fork. Serve.
